Three Bean Salad

Ingredients

15ml oil
tsp chilli flakes
1 med onion chopped
2 tins chopped tomatoes
1 tin cannellini beans
1 tin butter beans
1 tin borlotti beans
fresh parsley/coriander for garnish

Method

1. Heat the oil and fry the onions and chilli flakes till soft, add the tinned tomatoes and cook for five minutes.

2. Drain and rinse all the beans and add to the tomato and onions, season with salt and pepper; cook till warmed through and garnish with parsley or coriander.
 
* a little sugar can be added at the seasoning stage to balance the acidity of the tomatoes.
