Broccoli, Almond and Apricot Salad

Ingredients

One handful of whole organic almonds, unpeeled
One handful of stoned dried organic apricots
One head of organic broccoli, as fresh as possible

Method

1. Chop the almonds and apricots finely in a food processor.

2. Place into a serving bowl.

3. With a knife roughly chop the broccoli stalk and with your fingers break the florets into chunks. Then add both the food processor and chop in the same way, ensuring that the result is not too finely chopped.

4. Mix together in a bowl; dressing is not needed and helps the salad to retain its unique crunchiness.

5. Serve and enjoy this great tasting salad, packed with nutrition.
